Coconut Vegetable Soup

This soup is vegan and gluten-free!

A quick and delicious vegetable soup made using the ever-versatile Coconut Rice Blend. This warming dish is perfect for weekday nights and cool evenings.

Ingredients:

  • 2 tbsp of Oosum Coconut Rice Blend

  • 500g mixed vegetables of choice - we used mangetout, beansprouts, carrots, bell peppers and diced cavolo nero

  • 1 tsp coconut oil (optional)

  • 3 cups light vegetable stock

  • Salt and black pepper to taste

  • Chilli oil and coriander (optional)

Method:

Add stock or water to your pan, then stir in Oosum Coconut Rice Blend.
Bring to the boil, then simmer over a medium heat for 5 minutes
Add vegetables and cook for 2-3 minutes. Season with salt and pepper to taste.
Remove from heat, then let stand for 3 minutes.
Pour into serving bowls, garnish with chilli oil and coriander if using, then serve!
