Roasted Pureed Sweet Potato with Coconut

Roasted sweet potato puree with coconut blend.

Roasted pureed sweet potato with coconut rice blend. A decadent main or side dish. Oosum coconut rice mix takes your simple sweet potato to unbelievable heights of delight. Served with barbequed peanut suya beef. Easy to make. Suitable for vegan.

Ingredients:

I x meduim sized sweet potato, Oosum mango spice mix, olive oil, sea salt, Chilli flakes (optional)

Method:

Pre heat oven to 375 F or 185 F. Place potato slices on a baking tray and over with foil. Roast for 15 mins. Remove foil and roast for 10 mins until slightly brown and crusty on the edges. Remove and put in a bowl and puree. Serve hot or cold. As main or side dish.
